Ultrasonic technology for your barrels and casks
DYOGENA TECHNOLOGY
Ultrasonic technology
Ultrasonic technology transmits sound waves above the range of human hearing.
Ultrasonic waves are used for a variety of purposes, including cleaning, distance measurement and defect testing.
Ultrasonic cleaners use high-frequency sound waves to dislodge dirt and debris from objects.
Dyogéna has adapted this ultrasonic technology to a new application dedicated to barrel and cask cleaning.
Dyogéna technology has had its results validated by the Bordeaux ISVV (Institut des Sciences de la Vigne et du Vin).
How does it work?
The drum is filled with water, into which high-power ultrasound is diffused at a frequency close to 20 kHz.
This process ensures uniform action throughout the container, guaranteeing in-depth disinfection and regeneration of the wood surface.
The powerful vibration dissolves limescale and breaks down the cell walls of micro-organisms. Ultrasonic waves sanitize the entire barrel without damaging the wood fibers.
The average treatment time varies between 7 and 17 minutes, depending on the level of contamination and scaling.
The benefits of Dyogéna technology
Preserving aromas & Extending barrel life
Generally, after 4 to 5 years, the aromatic contribution of the wood to the wine is significantly reduced. The aromas have been dissolved and the wood pores are heavily scaled. Regular Dyogena treatment breaks down scale crystals without affecting toasting and preserves the aromatic qualities of the wood container.
Traceability
Containers from 114 to 600 liters are marked and dated in agreement with the customer. They are listed on a production document which is given to the customer. This enables them to be quickly differentiated from untreated drums. .
Reduction of SO2 input
The Dyogéna process limits inputs and is particularly well-suited to sulfite-free, organic or natural wines.
Ecological process
Non-energetic, the process requires only 1.5 m3 of water for one day of recycling treatment, and an average of 1.5 kWh of electricity per drum treated. No chemical inputs are used during the process.
Less effective competition
There are several forms of intervention on barrels and casks, but Dyogena remains the only truly effective one:
- Planing technology much more expensive than ours
- Steam: sanitization doesn’t go deep
- Environmentally unfriendly chemistry and difficult rinsing
The only solution for the complete elimination of Brettanomyces
Brettanomyces yeasts impart a leathery, stable or horse-sweat odor to the wine, considered an olfactory and gustatory defect.
A real scourge in high doses, they contaminate wooden containers, penetrating up to 9 mm into the pores.
Dyogéna Technology bursts the cell walls, totally eliminating Brettanomyces strains deep within the wood fibers.
